Zucchini Noodle Recipe

Here is a simple, tasty recipe that will help you stay on track! Replacing your pasta with zucchini noodles will not only minimize your glycemic impact, reduce your caloric intake as well as your carb intake, but it’s also delicious! Try it out and tell us what you think.


Ingredients:

  • 5 spiraled zucchini

  • 1 rotisserie chicken, shredded

  • Fresh mozzarella

  • Fresh basil

  • 1 8 oz. can tomato sauce

  • 1 16 oz. can diced tomatoes

  • 2 cups grape tomatoes, halved

  • 2 cloves garlic, minced

  • 1 Tbsp. olive oil

  • 1 Tbsp. Italian seasoning

  • 1/2 cup balsamic vinegar


Directions:

Add olive oil and garlic to hot pan and sauté for 30 seconds. Add tomato sauce, diced tomatoes, Italian seasoning, 1 cup halved grape tomatoes, basil, and chicken and let simmer covered for 5 minutes, stirring occasionally.


While tomato mixture is simmering, add balsamic vinegar to small sauce pan and let reduce. Add zucchini noodles to tomato mixture, stir, and cook for 3 minutes. Add fresh mozzarella, remaining grape tomatoes, and more fresh basil, and top with balsamic reduction. Enjoy!
