Matcha Banana Smoothie

Serving size: 1


Ingredients:

  • ½ banana

  • 1 cup fresh spinach

  • 1 packet Unicity Matcha Energy or Matcha Focus

  • 1 scoop Unicity Complete Vanilla

  • 3/4 cup water

  • 3–4 ice cubes


Directions:


Place all ingredients in blender and blend until smooth.



Spinach Pesto Chicken

Serving size: 4


Ingredients:

  • 12 oz. chicken

  • 1 cup yellow onion, chopped

  • 2 garlic cloves, minced

  • 3 cups fresh or frozen spinach

  • ½ cup shredded parmesan cheese

  • ¼ cup nonfat Greek yogurt

  • ¼ cup walnuts, chopped

  • 2 Tbsp. olive oil

  • 1 tsp. lemon juice

  • Salt and pepper, to taste


Directions:

  1. Heat a large nonstick skillet to medium-high and add 1 tsp. olive oil. Add chicken and cook until it reaches 165˚ F, about 5–6 minutes per side. Set aside.

  2. While chicken cooks, heat another nonstick skillet to medium-high and add 1 tsp. olive oil. Add onion and sauté until softened and browned, about 5 minutes. Add garlic and sauté for 1 minute or until fragrant, stirring constantly. Stir in spinach and cook until heated through and spinach is wilted, about 2 minutes.

  3. Pour spinach mixture into a blender and add walnuts, half the parmesan cheese, Greek yogurt, 1 Tbsp. olive oil, lemon juice, and salt and pepper. Blend until smooth.

  4. Slice chicken. Pour pesto sauce over chicken and sprinkle with the remaining parmesan cheese.


Baked Zucchini Tots

Serving size: 4


Ingredients:

  • 3 zucchinis, grated

  • 2 eggs

  • ½ cup cheddar cheese, grated

  • ¼ cup bread crumbs or panko

  • 1 tsp. oregano

  • ½ tsp. onion powder

  • ¼ tsp. garlic powder

  • Salt and pepper to taste


Directions:

  1. Preheat oven to 400˚ F and coat a muffin tin with cooking spray.

  2. Grate zucchini and wring out excess water.

  3. Combine all ingredients in a medium bowl.

  4. Roll mixture into equally sized balls and place in muffin tin.

  5. Bake for about 20 minutes, until golden.
