Matcha Banana Smoothie
Serving size: 1
1 cup fresh spinach
1 packet Unicity Matcha Energy or Matcha Focus
1 scoop Unicity Complete Vanilla
3/4 cup water
3–4 ice cubes
Place all ingredients in blender and blend until smooth.
Spinach Pesto Chicken
Serving size: 4
12 oz. chicken
1 cup yellow onion, chopped
2 garlic cloves, minced
3 cups fresh or frozen spinach
½ cup shredded parmesan cheese
¼ cup nonfat Greek yogurt
¼ cup walnuts, chopped
2 Tbsp. olive oil
1 tsp. lemon juice
Salt and pepper, to taste
Heat a large nonstick skillet to medium-high and add 1 tsp. olive oil. Add chicken and cook until it reaches 165˚ F, about 5–6 minutes per side. Set aside.
While chicken cooks, heat another nonstick skillet to medium-high and add 1 tsp. olive oil. Add onion and sauté until softened and browned, about 5 minutes. Add garlic and sauté for 1 minute or until fragrant, stirring constantly. Stir in spinach and cook until heated through and spinach is wilted, about 2 minutes.
Pour spinach mixture into a blender and add walnuts, half the parmesan cheese, Greek yogurt, 1 Tbsp. olive oil, lemon juice, and salt and pepper. Blend until smooth.
Slice chicken. Pour pesto sauce over chicken and sprinkle with the remaining parmesan cheese.
Baked Zucchini Tots
Serving size: 4
3 zucchinis, grated
½ cup cheddar cheese, grated
¼ cup bread crumbs or panko
1 tsp. oregano
½ tsp. onion powder
¼ tsp. garlic powder
Salt and pepper to taste
Preheat oven to 400˚ F and coat a muffin tin with cooking spray.
Grate zucchini and wring out excess water.
Combine all ingredients in a medium bowl.
Roll mixture into equally sized balls and place in muffin tin.
Bake for about 20 minutes, until golden.
